First journal - a request

Okay, so now that I have a project to handle, I've realized something important: I don't know a damn thing about unwrapping a mesh. I can get it to unwrap, but I have no idea what to look for when it comes to stretching, seams, and proper UV maps.

So if anyone can point me to any good resources about theory, etc. I'd be much obliged. I can learn regardless of the program, I just need to know what to look out for.
